Days 7-9

Day 7
Back to work for me! Monday was not bad - I really think that being at work helps because I am so scheduled and busy that I don't have time to wallow about missing treats. I had eggs over easy with tomato and avocado for breakfast, and an apple and leftover bbq chicken for lunch. I have been drinking a lot of tea, which is not unusual for me, and I am now down to the flavors that I don't drink as often, or the ones I have left to the end of the variety pack.

For dinner, I crusted chicken legs in a coconut flour, paprika, oregano, garlic powder and salt mixture, and fried them with some coconut oil and a little bit of bacon grease. Not exactly a healthful meal, but it was sugar free! Chad said that the meat was good, but if I had been able to get the skin crispier, it would have been awesome. It was my first time frying bone-in meat, so I will take that as a win. I also made some rice for him, and green beans steamed for both of us.

After dinner, we went for a walk to Old Poway Park. Robyn had a blast, sniffing positively everything in sight, and when we got home, my world changed. I tried a recipe for "ice cream" from another 21DSD blog, and holy macaroni, it was fabulous. Like, I licked the bowl, and considered going to the store to get ingredients to make more.

In a blender, mix
2 frozen green stemmed bananas
1 1/2 teaspoon vanilla
1/3 cup heavy whipping cream
1/4 cup unsweeted coconut milk beverage
2 tablespoons of unsweetened cocoa powder.

So easy, so delicious. It never got ice-creamy, but stayed a bit like a melted milk shake, but I didn't even care. Even though I want this for every meal for the rest of the detox, I know that I need to save it until I have a really bad craving. Knowing that it exists makes me so happy, and I think I will re-use this recipe even after the detox.

Day 8
I used the leftover bones from the chicken dinner yesterday to make broth in the crock pot over night. Then I used said broth and a can of crushed tomato sauce, basil, oregano and garlic to try the recipe found here:

For breakfast I had a green apple and hot tea. I forgot my lunch of leftover chicken in the fridge, as I left the house this morning with my purse, my heels, my laptop case, and the trash in my arms. The chicken didn't stand a chance. That means that today was my first attempt at finding a 21DSD meal on campus. I could have gone to the Faculty/Staff Club, and pay $10 for a salad of iceberg lettuce and cherry tomatos, but there had to be another option. Starbucks had protein pack of cheese and a hard boiled egg, or I could get one of those health green smoothies from Juice It Up. Looking at their nutrition facts, I decided to keep searching. I ended up getting a salad from Daphne's Greek Cafe. With some modifications, it wasn't bad!

At home, the Lamb Osso Bucca was cooked. I played sappy classical music, dimmed the lights, lit some candles, and when Chad came home, there was a romantic Italian Date waiting in the dining room, all 21DSD safe! The flavor was good, but not super exciting. The best part of the meal was the crushed tomatoes and broth on top of some steamed broccoli. And Chad quoting "the Dinner Party" episode of The Office. After dinner, I had another baking adventure. The reviews for coconut flour muffins were iffy, so I made this recipe up for myself:

In one bowl, mix:
1 1/2 cup coconut flour
2 tablespoons almond flour
4 tablespoons unsweetened cocoa powder
1/2 teaspoon baking soda
1 teaspoon baking powder

In another, mash 1 green-tipped banana, then add
1/4 cup melted butter
2 eggs, whisked
1/4 plain yogurt
1/2 cup unsweetened coconut milk beverage
1 teaspoon vanilla extract

Then I mixed the two bowls together, poured them into muffin tins, and sprinkled unsweetened coconut flakes on top. I baked them for about 30 minutes at 350. They turned out a bit strange - they were so moist I was afraid they weren't cooked enough, but when I took a bit, they seemed dry. The flavor wasn't bad, but I know my palate has changed since the beginning of the detox. I made half with the cocoa, and half without. If I took a small sip of milk with each bite of the chocolate muffins, the moisture level was perfect, and it was pretty darn close to chocolate cake.




Day 9
Today I was able to work the first half of my day from home. I had scrambled eggs for breakfast, with another chocolate muffin and milk. Thank goodness for Level 1- I would be lost without milk and cheese!

I am starting to think about the end of the detox. I am planning on only doing 20 days, as the 20th is Easter and I don't want to make my whole family prepare special meals just for me, or not eat what they have prepared. But, in general, I like how I feel on the detox. I have fairly frequent headaches and migraines, and I haven't had a single headache since I started the detox. I haven't had my normal energy level when running, so I definitely want to get back into that when it's over. I think my tentative plan is to avoid carbs for breakfast and dinner. If I have a sandwich for lunch, or something like that, I think it will help supply the energy for evening runs. And I would like to go down to only one dessert a week, and use some recipes like my new-found "ice cream" to help during the week. I am hoping that will help me still feel good, and keep weight off after the detox, but we will see how it goes.

Dinner tonight was with an old coworker and boss. We went to a beautiful Mediterranean restaurant in San Diego, and Ugh - I failed! And it wasn't even food I wanted, but I felt socially compelled! I am weak to peer pressure.  I was doing well- I only got a salad, but then they put a quarter of pita bread on my plate, gushing about how good it was and I had to try the hummus, it was the best in the city, and I didn't want to be rude by not accepting. It was good, but so not worth breaking the diet. I am glad, though, that at least I didn't break the results because of a craving. I need to practice my "politely declining" skills. I remember something in an American Girls book about turning your teacup upside down or placing your spoon towards the west... I should look that up.
